It’s a beautiful day. The leaves are falling, pumpkins are everywhere, and there is a new chill in the air. After church this morning we headed to a pumpkin farm. Once we arrived we discovered a beautiful array of pumpkins, gourds, and mums and I found myself in complete awe of God’s creation once again. The diversity found in His creation is far beyond anything that my mind can comprehend. And to top it all off, Brian and I begin our journey as a married couple exactly six months ago. Yay! I truly hope that your day has been as good as mine and that you feel recharged and ready to take on another Monday morning.
I am so happy that I have a blog this Fall so I can share all of the Fall fun with you! What’s your favorite Fall candy? I’ve always been a big fan of candy corn so when I was deciding on a dessert to make for a pot luck last week I knew it had to be something with candy corn. I flipped through a few cookie recipes and soon came up with Candy Corn Cookie Bars. Candy Corn Cookie Bars have everything that a Fall lover could want. You have the sweet taste of candy corn baked right into a spicy dough. They are so good!
Here is what you need to make them:
This recipe is also super easy! First, dump the cake mix into a bowl with 1 stick of softened butter, ½ a block of cream cheese, 1 egg, and a teaspoon of vanilla. Mix it up and it should look like this:
Once the batter is well mixed, add ½ bag each of white chocolate chips, Candy Corn, and Candy Corn M&M’s. Spread it into a lightly greased cake pan and bake at 350 degrees for 15-20 minutes. The key is to not over bake the batter. Take it out of the oven while it is still a little gooey or it’ll be too dry.

Here’s a quick version of the recipe:
- Spice Cake Mix
- 4 oz. Cream Cheese, softened
- ½ cup Butter, softened
- 1 Egg
- 1 tsp. Vanilla Extract
- ½ bag of Candy Corn
- ½ bag of Candy Corn M&M's
- ½ bag of White Chocolate Chips
- Put the cake mix, butter, cream cheese, egg, and vanilla in a large mixing bowl.
- Mix the dough well.
- Add the M&M's, candy corn, and white chocolate chips and gently stir.
- Spread the dough into a greased 9 x 13 cake pan.
- Bake at 350 degrees for 15-20 minutes.
