Last month when we were home for Memorial Day, my mom made this absolutely delicious fruit salad. The ‘fluff’ was made from cheesecake pudding and french vanilla coffee creamer. I was immediately determined to recreate the recipe with my own twist. I’m allergic to some tropical fruits, so I decided that my version would be all apple, and what goes better with apple than caramel?
Cut 5 or 6 large apples into small squares. I used Honeycrisp Apples because they are my favorite, but I’m sure other apples would be fine as well.
Making the Fluff
Mix one large box of caramel pudding mix with 1/2 cup of caramel coffee creamer. I do this in my KitchenAid Mixer (affiliate link) because it takes a while and I like to make cooking as easy as possible. Mix until smooth and fluffy.
Now add 8 ounces of whipped cream. Continue mixing on medium for 2 or 3 minutes.
Now, mix your apples and fluff and stir until all the apples are covered. Put the whole mixture in the fridge for about an hour to chill and set.
Serve it Up
I served my Caramel Apple Salad in these cute little glass bowls! This is the perfect dessert to go along with your summer barbecue or as a lite snack on a hot day.
