The past few weeks have been super busy for Brian and I. Last weekend we traveled to Louisville to meet my newborn nephew, Weston. On Saturday we drove down to Kentucky Lake with Brian’s parents for the day. Summer travels are so much fun but we are wore out!
So we opted for a cozy, simple date night at home this week. Not wanting to just turn on a movie and zone out we decided to have a little Mario Kart competition.
I decided to get creative and the Mario Kart Date Night was created!
We had yummy Toad Upside Down Stuffed Peppers, and Mario Cornbread Blocks, and a Raceway Cheesecake for dinner and then moved on to a few rounds of Mario Kart! I’m not really sure who won….but I think it was me!
We had Toad Upside Down Stuffed Peppers, Mario Cornbread Blocks, and No-Bake Cheesecake with a oreo and m&m track. Oh my goodness was this meal yummy!
Here is my recipe for Toad Upside Down Stuffed Peppers.
- 2 Red Bell Peppers
- Olive Oil
- ½ lb Ground Beef
- ½ Packet Taco Seasoning
- ½ Cup Corn
- ½ Cup Tomato Pasta Sauce
- ½ Cup Shredded Cheese
- 2 Slices Swiss Cheese
- Slice Bell Peppers into large circle shapes.
- Lightly coat with olive oil and bake in the oven at 375 for 40-45 minutes.
- Brown and drain ground beef.
- Return to skillet and add the Taco Seasoning, Corn, Pasta Sauce, and Cheese.
- Simmer until it is hot, but do not over cook.
- Spoon filling onto your plate and cover with your bell pepper.
- Cut small circles out of the Swiss Cheese with a toothpick or knife and place them on to of the Stuffed Pepper.

I bought the cornbread so no recipe to share here! I simply cut them into squares to look like Mario’s blocks. Simple, yet perfect with the theme.
Brian is all about cheesecake so I decided to try a no bake cheesecake for our Mario Kart Date Night. I am so glad I did because this cheesecake turned out so light and fluffy and delicious! I made the race track on top with m&m’s and oreos. It was so warm that the m&m’s started melting before I could get my pictures taken but it was still really good. You can find the No Bake Cheesecake Recipe at CincyShopper.com. I made mine with Splenda instead of sugar and decorated for our date night but otherwise the recipe is the same.

Once you have your yummy meal out of the way it’s time to fire up the Wii and play some Mario Kart. We went old-school and played to Nintendo 64 version. It really brought back memories. We didn’t really get competitive but it was still so much fun!
