One of the really fun things about growing up with sisters was when my mom, my sisters, and I would gather in the kitchen and cook together. When we were little we saw this as a chore and didn’t always want to participate, but now it seems like a treat. Cooking big family meals together has become a tradition. When we gather together on holidays it’s never a question of who will cook, because I know that we all will.
The food that we prepare is often more traditional in nature. My mom can make homemade biscuits just like my Granny. We stick to Homestyle foods that can be prepared simply with the best and freshest ingredients.
Another simple meal that we love to make (and eat!) together is Spaghetti. Since we like Homestyle meals we stick with Ragu’s Traditional Sauce. Ragu Homestyle Thick and Hearty Traditional Sauce is made with a combination of bold flavors such as basil, fennel, oregano, and black pepper but not yucky artificial flavors. Ragu’s Homestyle Sauce is the thickest yet and so it seems to hug pasta.
Seriously, Ragu’s Homestyle Sauce is really that good! In addition to Ragu Homestyle Thick and Hearty Traditonal Sauce they also have other amazing new flavors. Take a look at their website and let me know which one looks good to you!
Today I am going to share my simple Chicken Parmesan recipe with you. This recipe takes a traditional favorite, Ragu Homestyle Sauce and Pasta, and kicks it up a notch. Since Brian is a diabetic and we need to keep carbs at a minimum we use more chicken, cheese, and sauce and less pasta in this recipe.
First, cook your pasta and your chicken separately. I baked our chicken but and way that you want to cook it ahead of time is fine. I prepared two chicken breasts for this since there are only two of us.
Place your cooked pasta in the bottom of a loaf pan or small casserole dish. You can use whatever pasta you have on hand. We like these mini lasagna shells.
Next, place your chicken on top of the pasta shells.
Then cover with Ragu’s Homestyle Thick and Hearty Traditonal Sauce. Use as much or as little sauce as you like but I think that more is better!
Next, cover add a layer of shredded mozzarella and Parmesan cheese. Top that with banana peppers (optional) and oregano.
Put it in the oven for about 15 minutes at 375 and that’s it! It’s done when the cheese is melted and bubbly.
